Our Philosophy
Natural Winemaking, Minimal Intervention & Respect for Nature
At La Collina Degli Amici, we are committed to natural winemaking with minimal intervention and spontaneous fermentation. Our philosophy is rooted in a deep respect for nature, the vineyard, and the unique characteristics of each grape variety. We believe that great wine begins in the vineyard, where healthy soils, biodiversity, and careful vineyard management create the foundation for authentic and expressive wines.
We use low levels of sulfites in our wines, allowing the natural character of the grapes and their origins to shine through. Our approach to winemaking focuses on preserving the individuality of each harvest while allowing nature to guide the fermentation and maturation process.
Organic & Biodynamic Practices in the Vineyard
We use organic and biodynamic products and practices in the vineyard, encouraging a balanced and thriving ecosystem. Our commitment to sustainable viticulture goes beyond grape production. We aim to nurture the soil, protect biodiversity, and maintain the natural balance of our vineyards for future generations.
Each fall, we plant green manure between the vineyard rows, a carefully selected mixture including legumes and flowers. These cover crops help improve soil structure, support beneficial insects, encourage biodiversity, and naturally enrich the soil with essential nutrients.
Extra care is taken to ensure the health and productivity of each individual vine. By working closely with nature and observing the changing conditions throughout the seasons, we strive to cultivate healthy grapes that reflect the character of the land.
Spontaneous Fermentation & Minimal Intervention
In the winery, we follow the principles of minimal-intervention winemaking, allowing the grapes to express their natural potential.
Spontaneous fermentation plays a central role in our approach. Rather than relying on selected commercial yeasts, we allow naturally occurring yeasts to initiate fermentation, contributing to the complexity, individuality, and distinctive character of our wines.
We believe that winemaking should be a process of guidance rather than control. By intervening as little as possible, we aim to preserve the authentic aromas, textures, and flavors that develop naturally throughout fermentation.
Traditional Techniques & Thoughtful Wine Maturation
In the winery, we use various vessels, including concrete, wood, and stainless steel, to allow each wine to mature expressively.
Each material offers different characteristics and contributes to the development of the wine in its own way. Concrete provides a stable environment for maturation, wood allows for a gentle evolution of structure and complexity, while stainless steel helps preserve freshness and vibrant fruit characteristics.
By carefully selecting the most suitable vessel for each wine, we respect its individual personality and allow it to develop naturally over time.
Wines That Reflect Nature and Their Origins
At La Collina Degli Amici, we believe that wine is more than a product. It is an expression of the land, the seasons, and the people who care for the vines.
Our dedication to natural winemaking, sustainable vineyard practices, spontaneous fermentation, and minimal intervention reflects our desire to create honest, authentic wines with a distinctive sense of place.
Every vintage tells its own story, shaped by nature and guided by our commitment to quality, biodiversity, and respect for the environment.
Our philosophy is simple: respect nature, nurture the vineyard, and let the wine express itself.
